Chef Bertrand Grebaut and his partner Théo Pourriat are behind Clamato, a small-plates oyster and raw bar next door to their neo-bistro Septime, which has one Michelin star. The other property in their trio is the nearby Septime La Cave, a wine bar and shop. Clamato is open on Sunday evening when many Paris restaurants aren't.
