Eduardo (Lalo) Garcia, a classically trained chef, achieves a fusion of French and Mexican at Máximo Bistro. Son of migrant workers in the US, the Mexico-born Garcia apprenticed at La Bernardin in New York and cooked at Pugol, Mexico's top restaurant before opening his own restaurant in 2012. The bistro, which emphasizes fresh local produce in the daily changing menu, makes the best-restaurant charts with dishes like confit suckling pig. His more casual restaurant Lalo! with pizzas, pastas and appetizers is just across the street.
