Started as two-person street cart in 2012, the Guerrilla Tacos food truck shows up at set hours at regularly scheduled stops and the occasional food festival. Chef Wes Avila changes the menu daily based on what's fresh from the market and what he thinks would be tasty - like a sweet potato taco with almond chile, feta cheese, fried corn and scallions or a beef brisket quesadilla with oaxacan cheese, market greens, tomato chile, aged cheddar and chives.
