For the traveler who is serious about spirits, Copperworks Distilling Company is a must. This craft distillery in the heart of Seattle's downtown waterfront uses four, custom-built copper stills crafted in Scotland. They also use premium malted barley that is (primarily) grown in Washington State. Their selection is small and specialized: gin and vodka and, coming soon, the all-malt whiskey that is aging in charred, new American Oak barrels.
