Quay, one of Australia's most famous restaurants, is owned by Leon Fink with Celebrity Chef Peter Gilmore running the kitchen. In the Overseas Passenger Terminal overlooking the harbor, it features Australian fare with Asian influences and dramatic bridge views. The most famous dish is "Snow Egg," a poached meringue with ice cream center and a crunchy shell applied by blow torch. Sister restaurant is the Bennelong in the Opera House.
