Chef Nobu Matsuhisa has two Nobus in Las Vegas, but the one at the Hard Rock Hotel, with its seaweed wall, birch trees, and bamboo pillars, is the most stylish. The food is classic Japanese with a South American flair - yellowtail sashimi with jalapeno, black cod miso, and rock shrimp tempura are all winners - and is served in an artful, delicate style. The dining room has a definite see-and-be-seen vibe, so expect patrons dressed to impress with prices to match, but the servers are excellent and will do their best to make you feel at home.
