4Rivers Smokehouse sells Texas-style BBQ at more than a dozen locations around Florida, including downtown Orlando, Orlando/UCF and Kissimmee, but it all began at the flagship restaurant in a mechanic repair shop-turned smokehouse in Winter Park. The menu at the family-owned chain features the usual BBQ mainstays, but special to 4Rivers is the "Burnt-ends" brisket of shredded pulled pork smothered with signature sauce and re-smoked. Homestyle sides include classic fried pickles, collards, BBQ beans, corn on the cob and Texas cornbread. Vegetarians have more than a few options, including a vegetarian sideboard and a veggie plate of seasonal vegetables over baked cheese grits. A few years back Chef John Rivers published "The Southern Cowboy Cookbook."
