Sushi Shikon brings the Ginza sushi dining experience to Hong Kong. Every day it flies fish and seafood in from Tokyo's Tsukiji market and flavors its rice with 4-year-old vinegar. Winner of three Michelin stars, it is the first branch of Sushi Yoshitake in Ginza, which holds its own three stars. Service is intimate with master chefs working across an eight-seat counter. It is on the ground floor of The Mercer.
