Open in 2009, The Chairman became an instant hit because of its set menus and its emphasis on the freshest of ingredients used in its Cantonese cuisine. The restaurant buys local (often organic) from growers on the mainland and has its own small farm in Sheung Shui where it cures its own meats and makes its own pickles. MSG has been barred from the kitchen. On a small side street off Queen's Road, it is difficult to find, but the most simple directions are to start at the Land Kwai Fong Hotel, walk straight down, look for it on the right. Reservations need to be well in advance but can be done by email.
