Anthony Bourdain discovered Tomás Rueda's Tábula in 2013 and the world followed. Inspired by Catalan cuisine, chef Santi Santamaria, Ruedin - a former rocker turned chef - dedicates himself to "simple food" like his famous osso bucco, grounded in traditional ingredients acquired from small-scale producers. Next to the Museo Nacional, the restaurant is the Latin American version of soul food. Reservations are hard to come by.
