Mario Batali's famous downtown eatery is so good that it can be near-impossible to score a reservation. Try about a month in advance of your trip, or if you're staying at a nice hotel see if the concierge can work some magic. The extra planning is worth it, as this place serves up some of the best modern Italian food in the city. Be sure to try the homemade ravioli and barbecued squab.
