One of the specialities at Le Procope is tête de beau (calf's head) as prepared in 1686, the year the restaurant opened. Over the centuries it has entertained Voltaire, Napoleon and Benjamin Franklin who is said to have worked on the U.S. Constitution here when he was ambassador to France. Its classic dishes include steak tartare, cod filet with mustard sauce and leeks, coq du vin and and shellfish. It also has a children's menu. The upstairs dining room is a trip back in time.
