Chef Josef Centeno started making flat bread sandwiches out of fine-cuisine leftovers as a late night staff snack when he was at Meson G. The tasty tidbits developed into his signature sandwich the Bäco, which he serves up now at his Bäco Mercat in the historic Old Bank district. His original version was crispy pork belly and beef carnitas with caraway pepper. Now he has expanded into pork, beef, poultry, seafood and vegetables. He serves family style to parties larger than six Monday through Thursday nights. He opened Bäco Mercat in 2011 and Bar Amá, his version of Tex-Mex, in 2012, also downtown.
