Showcasing local ingredients and applying innovative grilling techniques, Humo, or Smoke, is the second restaurant from Panamanian chef Mario Castrellón in the city, the other being Maito in suburban Coco del Mar. The brisket, baby ribs and hamburgers are the draws, but it also has seafood and a veggie burger. It is open Monday through Saturday, noon to 10:30 p.m. Reservations suggested.
