Winery Sa Cova in San Mateu is deep in the heart of ibiza's countryside and a perfect day out indoors. Although wine making on the island dates back to Phoenician times, Sa Cova became Ibiza's first commercial winery in 1993 and caters mostly locally. Still a family-run business, it offers very educational wine tours and tastings and a restaurant on site that pairs tasty local cuisine with the various vintages. Prior booking required.
